I say *probably* because at this point the only thing that will satisfy my yearnings for sweets is one of those giant sundaes from Ghirardelli. Sigh.
You guys, this is going to make me sound really sick but if I don’t have some cheese bread or a piece of cake or some cookies that have real sugar in them I’m going to go flip-nuts. FLIP NUTS! <— that’s my new expletive. I like it.

Really though, all is well, all is well. I’m in week 4 of my 8 week challenge and I’m down 11 lbs as of this morning so the lack of white flour and sugar in my life has shown its rewards. But I just can’t get visions of baked goods out of my head! It probably doesn’t help that I’ve been working on the site all morning and have been scrolling through posts of blueberry muffin french toast and apricot pineapple bars and milk chocolate coconut cream pie. I want all of the things! Sigh.

I realize I’m not selling this recipe very hard, but it is what it is today. Let’s make it!
Frozen peaches and milk get put into the blender or processor…
And it turns into this! The frozen peaches actually freeze the milk as it mixes so it’s surprisingly soft-serve-ish. You can sweeten it with as little or as much honey as you’d like (some peaches may not even need sweetening) and I like to put just a teaspoon of lemon juice into the mix to brighten it up a bit.
You can eat it straight out of the blender for a soft serve experience or make it scoopable by transferring into a shallow container and freeze until solid. Scoop into bowls and enjoy your low-calorie, not-a-Ghirardelli-sundae-treat.
I promise it’s good even if it doesn’t sound like it! 🙂
Peaches and Cream Freeze
- 2 cups frozen peaches
- 2/3 cup milk
- 2 tablespoons honey more or less depending on peaches
- 1 teaspoon lemon juice
- Process all ingredients in a food processor or blender until smooth.
- Eat soft or spoon into a container and freeze until scoop-able.
