Instant Pot Chicken Divan

This Instant Pot Chicken Divan is made quickly and has all the flavors of your favorite casserole without the cream soups and mayonnaise! Perfect for dishing out onto a plate of rice or pasta!

Ingredients

  • 1 tablespoon olive oil
  • 3 boneless skinless chicken breasts about 2 pounds, 1-2 inch pieces
  • ½ teaspoon kosher salt
  • teaspoon pepper
  • ¼ teaspoon garlic powder
  • 3 tablespoons butter
  • ¼ cup flour
  • 1 cup chicken broth
  • 1 cup milk
  • cup white wine can substitute chicken broth
  • ½ teaspoon curry powder
  • 1 head broccoli cut into florets
  • 2 cups cheddar cheese
  • cup parmesan cheese
  • 1 tablespoon lemon juice
  • ¼ cup sour cream

Instructions

  • Heat olive oil in Instant Pot on the "Saute" function until shimmering.
  • Season chicken breasts with salt, pepper, and garlic powder and brown in the oil until lightly golden, but not cooked through. 
  • Add butter to the pot, followed by the flour. Stir and cook for 1 minute. 
  • Stir chicken broth, milk and wine into the pot and mix until flour is incorporated into the liquid. Stir curry powder and broccoli into the pot and cover with the lid.
  • Set Instant Pot to cook at high pressure for 4 minutes and allow to pressure to release naturally or wait at least 5 minutes after cooking to release it manually.
  • Stir cheeses, lemon juice and sour cream into the chicken and broccoli until cheese is melted and serve over rice or pasta.
