This slow cooker green salsa soup takes only a handful of ingredients and is perfect for a cold winter day!

Ingredients

  • 2 whole large boneless skinless chicken breast halves
  • 4 cup chicken broth
  • 16 ounces salsa verde
  • 24 ounces hominy undrained
  • 14 ounces beans any variety, undrained

Instructions

  • Place chicken, broth, salsa, hominy, and beans in the slow cooker. Give a quick stir and let cook on HIGH for 4 hour or LOW for 6 hours or until the chicken easily shreds.
  • Shred chicken and stir it back into the broth. Serve with avocado, sour cream, tortilla strips and cilantro if desired.
