Balsamic Glazed Loaded Sweet Potatoes

Ingredients

  • 4 medium sweet potatoes
  • 6 slices bacon cooked and crumbled
  • 4 oz. blue cheese crumbled
  • 2 green onions chopped
  • salt pepper, olive oil
  • 1 C balsamic vinegar
  • ¼ C brown sugar
  • 1 tablespoon butter

Instructions

  • Preheat oven to 400 degrees.
  • Place potatoes on a baking sheet. Drizzle potatoes with olive oil and sprinkle with salt and pepper. Bake for 45 minutes or until they pierce easily with a fork.
  • Combine vinegar and sugar in a small saucepan and bring to a simmer. Continue to simmer for about 15 minutes or until it has thickened enough to coat the back of a spoon.
  • Remove from the heat and stir in butter.
  • Slice potatoes down the center and top with bacon, cheese, onions and drizzle with the glaze.
