First things first. Let's just jump right in and talk about putting popcorn on your ice cream. Butterscotch sauce and hot fudge is great, but have you ever tried popcorn? If not, it's definitely something you need to consider. Up until a few weeks ago, I had only indulged in one caramel popcorn sundae a few years ago, and I'm not really sure why I haven't had one since. I'm clearly doing things very, very wrong with my life.

If so, you definitely need to make this because you know how good the popcorn is! The caramel and cheese combo makes it perfectly sweet and salty and still gives the sweet, satisfying crunch that just caramel popcorn gives to the sundae.
The other reason you need to make this sundae? The homemade hot fudge and butterscotch sauce!
Sure, you could just use chocolate syrup and jarred butterscotch, but that would be bummer.The recipes for both of the sauces are below, and both are phenomenal and EASY! Like, put all the ingredients in the pan and stir, easy.
What's the Difference Between Butterscotch Sauce and Caramel Sauce?
Butterscotch is made with brown sugar while caramel is made with granulated sugar. The flavor is a little stronger from the addition of molasses but is still pretty similar to caramel. Many people think its called butterscotch because of the addition of scotch, but that's not true.
How to Store Homemade Butterscotch Sauce and Hot Fudge
Both sauces can be poured into an airtight container like a mason jar and refrigerated for up to 3 months due to the high sugar content. I would not try freezing either of them.
The popcorn sundaes themselves are pretty straight-forward-- vanilla ice cream, hot fudge, butterscotch sauce and POPCORN!!
You're definitely going to want to save some of the popcorn for movie snacking with a big blanket, as well.
Movies AND ice cream are better with popcorn, IMO.

Homemade Butterscotch Sauce and Hot Fudge Sauce
Ingredients
Butterscotch Sauce:
- ¼ cup salted butter
- ½ cup packed dark brown sugar
- ½ cup heavy cream
- 1 ½ teaspoon vanilla extract
- ¼ teaspoon table salt
Hot Fudge:
- 2 cups powdered sugar
- 1 can 12 oz evaporated milk
- ½ cup salted butter
- ¾ C semi sweet chocolate chips
Instructions
Butterscotch Sauce:
- 1. Melt butter in a medium-sized saucepan over medium heat. Add the sugar, cream, and salt and whisk until blended. Bring to a gentle boil and cook for about 5 minutes, stirring occasionally. 2.Remove from the heat and add vanilla extract, stirring well. Allow to cool. The sauce will thicken as it cools.
Hot Fudge:
- 1.Place all ingredients into a medium-sized sauce pan and heat over medium.
- 2.Bring to a gentle boil, constantly stirring for 8 minutes.
- 3.Remove from the heat and allow to cool slightly before serving. Reheat as needed.
