One of my favorite things about Christmas time is having the excuse to make fun breakfasts. I’m not usually a breakfast-maker because, well, waking up is hard. But when the kids are out of school, it’s cold outside, and I have no place better to be than my cozy and warm kitchen, I breakfast and I breakfast hard.
This croissant french toast recipe is no more difficult to make than regular french toast but definitely has that “wow” factor. The buttery croissants somehow turn the egg and milk and cinnamon into a magic little pillows of love that dance merrily on your your tongue. You pair it with some bacon and you’ve got a pretty killer breakfast that is perfect for when you have company over.

I decided to go simple and pair the croissant french toast with Smithfield’s “Hometown Original” bacon. They have 10 different varieties to choose from though and I haven’t found one that I don’t like. 😉 I especially like their cherrywood smoked bacon. SO good.
There’s just something about bacon in jars that makes me happy…

- 4 day old croissants, cut in half
- 4 eggs
- 1/4 C half and half
- 1/2 tsp ground cinnamon
- 2 tsp sugar
- pinch of salt
- splash of vanilla
- Heat a non-stick skillet over medium-low heat.
- Combine eggs, half and half, cinnamon, sugar, salt and vanilla in a shallow bowl. Beat well until smooth.
- Dip each croissant half in the egg batter, front and back and place on a plate.
- Melt butter in the skillet and place dipped croissants in pan. Cook between medium and low heat until golden brown. Flip and repeat with the other side.
- Serve with butter, syrup, and BACON! ?
