I can’t get enough of this BLT Margherita Pizza! It’s so easy to throw together and gives pizza a light, crisp make-over for the spring and summer. A definite must make!

We just got back from NYC a few weeks ago, attending my brother’s wedding, and naturally I’ve got pizza on my mind. A big recap of my trip will be posted soon, but suffice it to say we ate NY pizza 4 (FOUR) times in our four days we were there and if I could have squeezed more into our trip I would have. I’m probably one of the few delusional people in this world that doesn’t get sick of pizza. #noshame
So when I came home on a mega pizza high and had a “chopped style” challenge waiting for me to participate in with Safeway, I was immediately drawn to the Signature Select Frozen Pizzas on my list of allowed ingredients. Duh.
With a Margherita pizza in hand, I already had Signature SELECT™ Thick Cut Bacon under my arm as a required ingredient and it just made sense to throw it all together into a BLT pizza! A far reach from the pizza I had in NYC, but a delicious take on pizza, nonetheless.
Pizza– check. Bacon– check. I just needed at least one more Signature SELECT product to satisfy my challenge and reached for some mayo to make a little dressing to drizzle over the pizza. While my Margherita pizza was baking, I fried up a few crispy strips of the Signature Farms Hickory Smoked bacon and successfully restrained myself from eating it all before the pizza even came out of the oven. I then cut some romaine lettuce and tomatoes up into a little salad and squeezed a little fresh lemon juice over the top of them to add a little pep.
Once the pizza was out of the oven, I piled it high with the salad and topped it with big, torn pieces of crispy bacon.
The crowning glory of this BLT Margherita Pizza and what totally takes it from “meh” to “yikersholyamazeballs” is a simple little dressing made from a few dollops of Signature Kitchens mayonnaise, a generous squeeze of fresh lemon juice and a pinch of dried dill weed. It doesn’t sound like much, but it makes all the difference here.
The pizza is hot and cheesy with hints of basil and olive oil and the tangy salad, crisp bacon and cool dressing just make for the ultimate explosion of flavor and textures.

- 1 Signature SELECT Frozen Margherita Pizza
- 6 strips Signature SELECT Hickory Smoked Bacon
- 2 C romaine lettuce, washed and chopped
- 1 tomato, diced
- 3 tbsp Signature SELECT Mayonnaise
- 1 tbsp fresh lemon juice
- 1/8 tsp dried dill weed
Cook Pizza according to package directions.
Cook bacon until crispy and cut into bite-sized pieces.
Combine mayonnaise, lemon juice and dill and stir until smooth
Assemble pizza by topping the warm pizza with the lettuce, tomato and bacon. Drizzle the dressing over the top of the pizza and serve immediately.
