    Easy Italian Baked Tilapia

    Do you love fish but have some fish haters in the house? You might want to try this Italian Baked Tilapia recipe. It's fish, but not fishy tasting and it couldn't be any easier to put together. It had even my PICKIEST eater cleaning her plate! Italian Baked Tilapia

    I haven't always been a fish person. In fact, I never had a "real" piece of fish (fish sticks don't count) until I was in my 20's. Crazy, I know. My mom was raised on meat and potatoes and while my dad would clean and cook the fish that we caught the few times we went fishing, those small rainbow trout fillets were not on my radar when I knew there were burgers grilling over the fire.

    But, I've been cured!  When I started culinary school and the head chef told us on our first day that we needed to tell him right then if there was anything we wouldn't eat, I held my tongue. I knew it was my chance to try new things even if they were scary, I didn't speak up, and I held my peace with every bite of alligator, sweet breads, sealife, and the like.

    This fish isn't rocket science. It isn't fussy and you won't find it on fancy restaurant menus but it's just what I need on a busy night when I'm tired of chicken or grilled cheese sandwiches, or soup, or, let's be honest, cereal. It take 4 ingredients-- fish, Italian dressing, olives, and tomatoes.

    It might not sound like much, but the combination of the baked and tender fish with flavor of the Italian dressing, charred tomatoes, and olives pretty much makes for a fun dance party in your mouth.

    So, if you have a few in your household that need a little "curing" like I did by way of exposure therapy, this may be a good way to introduce them to fish. It's so flavorful, not fishy, and definitely needs to be on your MAKE NOW list!

    Ingredients

    • 4 whole tilapia fillets 6-8 ounces each
    • ¼ cup Italian Dressing I used Olive Garden's
    • ¼ cup sliced kalamata olives
    • ½ cup grape tomatoes halved
    • salt and pepper

    Instructions

    • Preheat oven to broil.
    • Spray a 9x13" baking pan with cooking spray and lay the fish across the bottom. Sprinkle each fillet with salt and pepper and pour the Italian dressing evenly over the fish followed by the tomatoes and olives.
    • Place fish under the broiler and cook for 8-10 minutes or until fish flakes easily in the center when turned with a fork and tomatoes are charred.

    I need to get something off my chest.

    You know those pre-made deli salads you can buy in the refrigerated section? The ones that sometimes come in cardboard milk jug-type boxes? Yeah, those. Well, I think they are an abomination to the world of salads. A homemade potato or macaroni salad can be a wonderful, wonderful thing full of flavor and texture. But these boxed varieties just ruin it for everyone.

    Just imagine if one had based their views on potato salad based on what they experience from a box!

    "Nah, I don't like potato salad", they say. "Macaroni Salad is gross", they say. Just think about what they are missing out on!

    Fer shame.

    That's why I'm divulging my macaroni salad recipe today. Let's get started! I'm not a big fan of super sweet macaroni salad, and this one fits the bill. Instead of sweetness, we're dialing up the flavor with diced olives, pimentos, and green onions.

    Add some mayo, salt and pepper to the mix and you've got some pretty darn good dressing. I'm always tempted to add a little milk and lemon juice and throw it in the blender to make a smooth salad dressing...

    From here you just fold in the cooked macaroni and chopped egg until it's all mixed up. That's it!

    Ingredients

    • 1 pounds elbow macaroni
    • 4 ounces canned chopped black olives
    • 4 ounces chopped pimentos drained
    • 1 bunch green onions chopped
    • 2 cups mayonnaise
    • ½ teaspoon kosher salt
    • ¼ teaspoon black pepper
    • 7 whole hard boiled eggs peeled and chopped

    • Cook elbow macaroni according to package directions, drain and run under cold water to chill. Set aside.

    It's the beginning of September and I'm all like "Heeeeellllooooo Soup making weather!". I think I'm on my 3rd soup making venture this week. Not even kidding. But that's okay because that means that I get to share with you THE best quick chili recipe ever today.

    Amazing 30 Minute Chili

    There's not a whole lot that beats a big bowl of warm chili on a cold day and this recipe is always on rotation during the winter months. And when it comes to chili, I usually want it dotted with big chunks of slow-cooked beef and simmered for hours on end (like this one), unless it's this 30 minute chili. You guys, you won't believe how much flavor this has and how easy it is to throw together!

    To start out, you'll brown 1 ½ lbs of hamburger with some sweet onion. When it's cooked, drain off the fat and season it up a bit with chili powder and salt.

    Then, you'll dump a can of chili beans, stewed tomatoes, tomato sauce, and 2 cans of fire roasted green chilies. Don't let the amount of green chilies scare you. They are very mild and give it such good flavor.

    Give it all a stir and let simmer for 20-25 minutes (or longer) to let the flavors marry. The longer it simmers, the better but 25 minutes is just about right for a quick dinner and it tastes great at that point.

    When you're ready to eat it's great served by itself with all the usual chili toppings and corn bread, ladled over potatoes or hot dogs, or even served on top of spaghetti. Have you ever had chili spaghetti? I was a skeptic until I tried it and now I'm sold.

    Ingredients

    • 1 ½ pounds lean ground beef
    • ½ whole large sweet onion chopped
    • ½ teaspoon kosher salt
    • 1 tablespoon chili powder
    • 14.5 ounces chili beans undrained
    • 14.5 ounces stewed tomatoes undrained
    • 15 ounces tomato sauce
    • 14 ounces fire roasted canned diced green chilies

    Instructions

    • In a large skillet brown hamburger and onions over medium heat until beef is cooked through. Drain off fat and return to pan on stove.
    • Season meat with salt and chili powder and cook, stirring for about 1 minute or until fragrant.
    • Add chili beans, tomatoes, tomato sauce and chilies to the beef mixture.
    • Bring to a boil and reduce heat to a low simmer. Cook, uncovered for 20 -25 minutes to allow flavors to blend and to thicken slightly. Serve with favorite chili toppings.

    My kids will confirm that the phrase “go make a sandwich” comes out of my mouth more often than they’d prefer. In my defense, I hear “Mom, I’m hungry” much more than I’d care to as well. Sandwiches are easy, budget-friendly and I basically always have all the ingredients on hand for some form of one. But there is much more to the world of sandwiches than peanut butter and jelly and turkey and swiss.

    Take this Caesar pork tenderloin sandwich for example. It has all the components of a sandwich but blows other lesser sandwich-like beings out of the water with flavor! AND the amount of time it actually takes to make is what really has me sold on this. Let’s make it and I’ll show you how stinkin’ easy it is to throw together.

    For the meat, I’m using a Hormel ALWAYS TENDER® Lemon Garlic Pork Tenderloin. It’s pre-marinated and ready to just pop into the oven. Hormel Foods ALWAYS TENDER® line features pork tenderloins, pork loin filets & pork roasts in a variety of flavors. I like to keep one in my freezer for a quick and easy meal that I don't have to think about, look up a recipe, and wonder how it's going to turn out.

    You literally just have to cut open the package, put it in a baking dish or sheet, and put it in the oven.

    Caesar Pork Tenderloin Sandwiches

    The pork tenderloins take about 40-45 minutes to cook and when they come out they are juicy and ready for whatever you want to throw at them. In this case, I'm just slicing it up for sandwiches.

    To finish off the sandwich, I used a caesar salad kit from the grocery store that includes chopped romaine, caesar dressing and croutons. You can set the croutons aside to munch on later. Slice ciabatta rolls in half, stack with the warm pork tenderloin slices and top with the romaine, a sprinkling of the parmesan cheese and a drizzle of the caesar dressing.

    B-52's Concert at The Oregon Zoo

    A few weekends back the hubs and I had the chance to break away for a evening with some friends and rock out to the B-52’s at the Oregon Zoo. The B-52’s!! SO fun. I thought I'd share some pics of our night today. I don’t know if you’ve noticed but I’ve added page up above in the navigation bar call “Heather Likes Portland” and every now-and-again I’ll be posting about the places we’ve ate, visited, and played. I love living here and want the world to know just how kick-butt Portland is. This DOES NOT mean I’ll be cutting back on recipes at all so if following along in our adventures isn’t your gig, you’ll still have all the recipes you need.

    Every year the Oregon Zoo lines up a summer concert series and brings in some seriously fun acts throughout the summer. The stage is in the middle of the Zoo and and there’s lots of room to spread out a blanket and lounge about until the show starts.

    Since I’m all about the food, we decided to grab a bite to eat before the show started and were actually very pleasantly surprised with how good our meal was from the Afri-café, the zoo’s small cafeteria. We split a burger topped with bacon, guacamole and mango salsa on a Brioche Bun and a basket of parmesan-herb fries.

    Most of the tickets are general admission and since we weren’t able to get there super early we ended up towards the back of the lawn but still feel like we had great seats. The back of the lawn really isn’t that far from the stage to begin with so it’s hard to have a bad seat.

    The opening act was a crazy band called The Fabulous Downey Brothers. They were entertaining but kind of crazy. I’m also not sure how their name came about because there was at least one girl in the band. Their costumes made it hard to tell but it definitely wasn’t just brothers. And then the B-52's came out and they are a hoot.

    We found out through the evening that there are some BIG B-52’s fans. I hesitate posting this video but you can’t see his face so I think it’s safe. Sitting behind this guy absolutely made our night. I wish I would have gotten video of him doing the same dance but with lobster claws during "Rock Lobster" but my phone wasn't cooperating. The people watching we did there was just as fun, if not more fun, than the concert itself. It was quality, really.

    This girl and I never get to hang out so we needed to document the joyous occasion. Isn’t she the cutest?

    There are many more concerts coming up this summer at the Zoo and if you’re in the area, I definitely recommend it. It’s such a fun, pretty venue and your concert ticket is good for admission to the zoo on the same day.

    Ruffles Krispy Treats

    I've been dipping my fries in my milkshakes for as long as I can remember. In high school I could get a Jr. Bacon Cheeseburger, a small fry and a Frosty for $3.00. Remember when you could do that? Fries + Frostys = LOVE and I'm sure if any single thing in my adolescence is going to give me diabetes, it's going to be the Frosty. #truth

     

    But Frostys and fries aren't the only sweet and salty combo I've binged on.  I'll admit these krispy treats are a little bit ridiculous with mixing two things that are not necessarily "wholesome"-- potato chips and marshmallows. But guys, in this case, two wrongs make something so, so right. The ruffles chips are nice and crispy and salty and make the gooey marshmallow taste so good.

    Ingredients

    • ¼ cup salted butter
    • 4 cups mini marshmallows
    • ½ teaspoon vanilla extract
    • 5 cups Ruffles Potato Chips lightly crushed

    Instructions

    • Combine butter and marshmallows in a mircrowave-safe bowl. Cook for 1-1½ minutes or until the butter and marshmallow are just melted, no longer.
    • Stir in vanilla extract and add potato chips, folding until chips are coated with the marshmallow.
    • Press into a greased 8x8" pan and let cool. Cut into 12 squares.

    The Grande Colonial, La Jolla California - Last week I gave you a peek at our Disneyland trip we took over the summer and now I'm back with leg two of our trip in La Jolla! When planning it I decided that after spending 4 full days chasing kiddos around the parks in 90 degree weather, we'd need some time to breathe before braving the flight home and going back to real life. So we headed south to La Jolla to spend a couple of days playing on the beach.Grande Colonial, La Jolla California surrounded by Palm Trees

    We stayed 2 nights at the gorgeous Grande Colonial and were super happy with our stay. This hotel has been open since 1913 and it was a fun change of pace to stay in a historic building. Of course, it's been updated over the years and has everything it needs to be modern and accommodating but still has all the charm. The hotel even boasts its history as being "haunted" and talks about it in the in-room information book. They say that all encounters have been "friendly" in nature, but I'm glad I don't have anything to report on that end. I'll just say that my 3:00am nursing sessions were spent with my glasses off (I'm mostly blind) and at least the bathroom light on. I'm kind of a whimp and probably should have stopped reading when I saw the word ghost.

    Hotel Room in the Grande Colonial, California.I actually had the foresight to keep the kiddos from immediately going into destruction mode once stepping into our room this time and snapped this pic. It was cute, cozy and had an amazing view. My only complaint, and the hubs will back me up on this, is that there were too many pillows on the beds! Sounds crazy, but as pretty as the bolster pillows (the long skinny ones) and shams are, they take up some major floor space when not on the beds. With all of our luggage, stroller and carseat floor space is a major commodity. Maybe we're silly.

    The Grande Colonial has a restaurant on-site called Nine-Ten and I only heard great things about it while there. We decided not to give it a go with the kids but if we go back, I'd love to visit. The lobby smelled amazing and the menu makes me hungry.

    The grounds were pretty but it's hard to mess things up when you've got such an easy backdrop to work with.  🙂 We loved our stay here and thought everything from the staff to valet to the big over-sized pool towels was great.

    Alright, what if I told you you could have tender, flavorful, BBQ chicken sandwiches ready on your table in about an hour-- would you believe me? Well, of course you would because I've never led you astray in the past. But really, if I was just some crazy chick on the internet that posted random recipes on a website that she made up, would you believe me?

    What's The Secret To These One Pan BBQ Chicken Sandwiches?

    The secret to these BBQ Chicken Sandwiches? We're using boneless skinless chicken thighs that are full of flavor and stay tender and moist as they simmer away in BBQ sauce. Oh, and I used a pretty darn good sauce to make these too! This KC Masterpiece® Kansas City Classic limited-edition sauce just came out to celebrate the brand's 35th anniversary and it's a pretty excellent way to celebrate.

    You'll brown up some chicken thighs in bit of olive oil and season with salt and pepper and then remove them to make way for some onion and green bell pepper. Once the veggies are tender, chicken get's put back in the pan aaaaaand.....

    Smothered with some KC Masterpiece® sauce. From here all that's left to do is put a lid on the pan, reduce the heat to a simmer and let cook until the chicken is tender and easily shreds-- about 30-40 minutes.

    Top hamburger buns, kaiser rolls. or whatever your bread of choice is with the shredded chicken and you've got a quick and super filling meal! This BEST EVER Cole Slaw, or Sweet Broccoli Salad would make a super pairing as well.

    One Pan BBQ Chicken Sandwiches

    Ingredients

    • 2 tablespoon olive oil
    • salt and pepper
    • 6 boneless skinless chicken thighs trimmed of excess fat
    • ½ C onion chopped
    • 1 med green bell pepper chopped
    • 1 21 oz bottle KC Masterpiece® Kansas City Classic BBQ Sauce
    • Bread and other sandwich toppings

    Instructions

    • Heat olive oil over medium high heat in a large skillet. Season chicken thighs with salt and pepper and brown on both sides until lightly golden. Remove from pan.
    • Add onions and peppers to the pan and saute for 4 minutes or until tender. Return chicken to the pan and pour in BBQ sauce. Stir to coat, cover and lower heat to a simmer.
    • Cook 30-40 minutes or until the chicken is tender and easily shreds. Top bread with shredded chicken and any desired toppings.

    Banh Mi Style Pulled Pork Sandwiches

    Banh Mi Style Pulled Pork Sandwiches - Truth: I'm basically smitten by anything that includes both bread and pulled, saucy meat.

    Truth: "Banh Mi" is actually the Vietnamese term for all types of bread and baguettes but it's evolved and now refers to a meat-filled sandwich found in Vietnamese bakeries.

    Truth: Vietnamese food rocks

    Truth: I've taken some liberties with this recipe and don't claim this as an authentic banh mi.

    Truth: It's amazing.

    How to Start Your Banh Mi Style Pulled Pork Sandwiches

    The meat starts off in the slow cooker where it slow-roasts for hours and gets fall-apart tender. The sauce it's cooked in is a combo of sweet chili sauce (click here to learn a little about it), lime juice, and fish sauce. Fish sauce is a key ingredient in Thai and Vietnamese cooking and doesn't actually taste as "fishy" as one would think. While I fully encourage you to give it a go, soy sauce can be substituted if you can't get past the name.

    Stir up the sauce and pour over the pork in the slow-cooker. I usually like to use a pork shoulder, but this time I used a pork sirloin roast which is a good choice if you want something a bit leaner.

     While the pork is cooking, let's put together a little cool, crisp, slaw. One of the main components of this slaw is daikon and if you haven't had it it's a super mild white raddish that you can find in most produce sections. Sometimes it's called Japanese raddish but you'll be able to spot it because it basically looks like a long, giant root.

     Shred some daikon and carrot, throw in some fresh cilantro and toss with a dressing made of rice wine vinegar, sugar, sesame oil, and  a little salt. It's okay if you get this put together a few hours before you're ready to serve because the carrots and daikon hold their crunch really well.

    Now Wait

    After 6-8 hours your meat should be full cooked and ready to go. Take the pork out of the slow cooker and place on a plate to easily shred. Pour the cooking liquid from the slow cooker into a separate bowl, skim the fat off the top and combine 1 cup of that liquid with another ¼ C of sweet chili sauce. Toss the shredded meat with the cooking liquid sauce and you're ready start making Banh Mi Style Pulled Pork Sandwiches!

    Assembling Your Pulled Pork Sandwiches

    Before starting to assemble the pulled pork sandwiches, mix a dollop of mayonnaise with a squirt of sirracha and spread each side of a toasted baguette with it. From there, pile high with the hot pork, a spoonful of the slaw, and top with a few thin slices of cucumber.

    Take a bite and enjoy the crunchy, smooth, cool, and spicy-ness. Yup- it's good.

    Ingredients

    • 3 lb pork shoulder
    • salt and pepper
    • ¼ C sweet chili sauce
    • ¼ fish sauce
    • 1 lime juiced
    • ¼ C sweet chili sauce
    • 1 ½ C shredded carrots
    • 1 ½ C shredded daikon
    • ½ C fresh cilantro coarsely chopped
    • 2 tablespoon rice vinegar
    • 2 teaspoon sesame oil
    • 2 teaspoon sugar
    • ¼ teaspoon salt
    • cucumber thinly sliced
    • mayonnaise mixed with sirracha to taste
    • french baguettes sliced and toasted

    Instructions

    • Season pork shoulder with salt and pepper and place in a slow cooker.
    • Combine fish sauce, ¼ sweet chili sauce, and lime juice in a small bowl and pour over the pork. Cook on low for 6-8 hours or until the meat shreds easily. Remove meat from cooking liquid and shred.
    • Pour cooking liquid into a separate container, skim off fat and combine 1 C of this skimmed liquid with the remaining ¼ of sweet chili sauce. Toss the meat with this sauce and set aside.
    • In a large mixing bowl combine daikon, carrots and cilantro. Whisk together the vinegar, sesame oil, salt, and sugar and pour over the veggies. Toss to combine and set aside.
    • Spread each baguette with the sirracha mayo, a few slices of cucumber, and a spoofull each of the meat and slaw.

    Do you ever have your mom come for a visit and get so caught up in the fun you're having that you forget that the world hasn't stopped turning and you still need to blog? I do. I blame the Olympics. And ice cream.
    And mom (love you!). It's been fun to watch the athletes while eating a big bowl of ice cream. I totally make myself feel superior because they probably can't eat a cookie without feeling guilty.
    Sadly, my good feelings are gone after about 30 seconds when I realize that no matter how I try, I will never be able to stick a landing on a double-twirly-somersault-thing(technical term) no matter how I try. Turns out I can't eat a guilt-free cookie either. Eh. Here are the killer easy french dip sandwiches that I promised on Friday. They are quick, easy, and literally can be on the table in 15 minutes (if you make the aioli ahead of time).

    EASY FRENCH DIP SANDWICHES

    When choosing what kind of deli roast beef to use, I feel like it's worth spending a few extra dollars to get a good quality meat; it will make a difference. The real deal maker with these sandwiches is the lemon-garlic aioli. The lemon brightens the otherwise super-savory meat and just rounds out the whole sandwich.

    The recipe calls for beef consomme. You can find it in the soup aisle and I like to use it in place of beef broth for this as it has a more intense flavor and lacks the sometimes tinny aftertaste the broth can have.

    Ingredients

    • 2 lbs deli-sliced roast beef
    • 1 packet french onion soup mix
    • 2 14.5 oz cans beef consomme
    • 1 soup can of water
    • 1 tablespoon Worcestershire sauce
    • 1 ½ teaspoon dijon mustard
    • 8 crusty sandwich rolls
    • 8 slices swiss or provolone cheese
    • 1 recipe lemon-garlic aioli

    Instructions

    • In a skillet combine consomme, soup mix, dijon mustard, Worcestershire sauce, and water sitrring to combine. Bring to a simmer.
    • Prepare sandwich rolls by spreading lemon-garlic aoli on one side of the bread a placing a slice of cheese on the other half.
    • Add roast beef into the simmering broth and leave it there just until it’s hot. Remove meat from broth and divide among prepared rolls.
    • Ladle the au jus (broth) into bowls and serve with the sandwiches for dipping.

    2 Ingredient Pumpkin Muffins

    You can make these moist, 2 Ingredient Pumpkin Muffins with 2 things you might already have in your pantry! Just stir, spoon into muffin cups and bake! A perfect recipe for the kids to make!

    So, I have a daughter that loves muffins. She'd eat them all day if I let her.  These 2 Ingredient Pumpkin Muffins are some that I don't mind her eating more than one at a time because they are loaded with pumpkin goodness, super easy to make, and take all of 2 ingredients!

    How to Make Pumpkin Muffins with a Cake Mix

    You'll need 1 box of spice cake mix and 14 ounces of canned pumpkin. I doubled the recipe in the pictures. You'll also need any mix-ins you want to use. I used walnuts here and I'll go over some pumpkin muffin mix-in ideas below.

    Are you ready for the hard part? Dump the cake mix and pumpkin into a bowl.

    Very good.  Now it's time to taste.  Not me, her.

    Stir until it's combined and there's no more dry parts.

    Time to scoop your 2 ingredient pumpkins up! I use an ice cream scoop for all my muffins and cupcakes to make scooping them easier and even. It also makes the tops smooth which is nice for this recipe because the shape of the muffins don't change very much while baking.

    Pop them in the oven at 350 for about 20 minutes and you've got muffins! And, in my case, a very happy four-year-old.

    Mix- In Ideas for 2 Ingredient Pumpkin Muffins

    There are so many things you could mix into these muffins that would be delicious. Here are some ideas:

    • Mini Chocolate chips or M&Ms
    • Nuts- walnuts or pecans will work best
    • Toasted Oats
    • Cinnamon Streusel (Sprinkle on the top before baking)
    • Cream Cheese Icing (drizzle on top after baking)

    Tips for Making the BEST 2 Ingredient Pumpkin Muffins

    • Use Canned Pumpkin NOT Pumpkin Pie Filling-- Pumpkin pie filling is not the same as just plain canned pumpkin, so make sure you grab plain pumpkin at the grocery store when you're getting ready to make these muffins.
    • Do not Over-Mix-- Stir the mixture just until no dry spots remain. The batter will be thick, but try hard to resist the urge to continue mixing. It will only make the muffins tough.
    • Use a cookie scoop to portion out the batter -- A cookie or ice cream scoop similar to this one will make the task of portioning the batter into the muffin pan a breeze.
    • Use Muffin Liners-- These muffins bake best when using paper liners.

    • 18 ounces spice flavored cake mix 1 box
    • 14 ounces canned pureed pumpkin 1 can
    • ½ cup mixins optional

    Instructions

    • Preheat oven to 350 degrees.
    • Combine cake mix and pumpkin in a large mixing bowl. With a spatula or wooden spoon, stir until combined and no dry spots remain — the batter will be thick.
    • Stir in mix-ins if desired and spoon into a lined muffin tin. Bake for 20-23 minutes or until a toothpick inserted in the center comes out clean.
